Today marks day 5 of fresh week. This evenings meal was paella!
6 boneless chicken thighs quartered
freshly ground black pepper
100 g chorizo, sliced (Because I don’t eat pork I purchased a Halal spicy beef sausage)
1 onion, finely chopped
4 cloves garlic, finely chopped
2 litres Hot chicken stock
2 large pinches saffron
1 heaped teaspoon smoked paprika
500 g paella rice
1 small bunch flat-leaf parsley chopped
2 handfuls frozen peas
10 king prawns,
500 g mussels
2 small squid or Calamari rings
Season the chicken pieces with salt & pepper. Heat a little olive oil in a large deep pan and fry the chicken until golden brown on both sides.
Add the sliced chorizo and fry until browned and crispy, add the onion and garlic and cook until soft. Infuse half the hot chicken stock with the saffron. Add the smoked paprika, rice and infused stock and cook on a medium heat, stirring from time to time.
After 20 minutes pour in the rest of the stock along with the peas, prawns, mussels and chopped squid. Place a lid on the pan and cook for a further 10 minutes.
Finally sprinkle with chopped parsley and a wedge of lemon.
