Breakfast Burrito

I find that a great way to use up items in the fridge is to throw it all in a Burrito, quite often in my fridge there will be one lonely sausage or a tomato so rather than go out and buy extras to make a full meal you can add things that you do have to make one.

Mr Gourmand loves exciting breakfast dishes so when I found myself faced with a packet of mini chorizo, some cheese, a tomato, 1 red chilli, 2 eggs, half an onion and a handful of coriander the first thing that came to mind was a breakfast burrito.

There was no method to this recipe, in fact everything was just thrown together to make a simple breakfast, it took less than 10 minutes from fridge to table to belly, and was polished off in no time.
