Day 7

Falafel In Pitta Bread with Salad

In today’s bag we had the ingredients to make a simple dinner of Falafel in a wholemeal pitta bread with a Greek style salad.

There was no real cooking involved with this dish, I usually make my own Falafel but on this occasion I cheated and used ready made.

I filled the pitta bread with lettuce and hummus  added the Falafel and a generous spoonful of home made mint and cucumber yoghurt, this was served with a Greek salad and stuffed peppers.

Tuna Quesadilla

If I’m being honest I’ve never actually eaten a traditional Quesadilla but a quick look on Mr Google gave me an idea of how to make one, I hope purists don’t mind that to make this I just threw a few things together with no thought!

My Tuna Quesadilla contained tinned tuna, grated mature chedder, olives, Tabasco sauce and roasted peppers.  The Quesadilla was served with a green bistro salad.

Spring Salad

After a few days of heavy eating sometimes it’s good to give your stomach a little rest, I know that most of the ingredients that go into a salad are full of water and people find them a little bland but I think that with a few flavourful additions you can turn a boring watery salad into something amazing!

My favourite salad consists of Cucumber, baby pea shoots, peppers, vine tomatoes, olives, cucumber, cress, cos lettuce, avocado and radish.

Please note I didn’t eat this whole bowl on my own, it served two of us!

Day 3

Roast Chicken Dinner

I must begin by saying that when I decided to cook a roast dinner I was worried that the ingredients might not fit in my Emma Bridgewater bag.  I usually either take a Hessian bag or my shopping trolley out when I go shopping but I wanted to make sure that I only used the one bag I had to be very careful about what I purchased.

I popped to my local butcher Aubrey Allen to get a small chicken to feed the 3 of us which when placed in the bag actually didn’t take up too much room.

I was very lucky to find that there was a little market outside the Pump Rooms in Leamington Spa selling local grown vegetables so I picked up some purple sprouting broccoli, potatoes and a cauliflower.  I already had some sweet potatoes in the house and the ingredients to make Yorkshire puddings and cheese sauce.  The carrots were a Marks and Spencer purchase.

Day 2

Today my Emma Bridgewater bag contained the ingredients to make the following dish:

Chicken with Vegetables and Noodles

Some days require what I consider a lazy meal, who want’s to spend hours in the kitchen each evening cooking a meal? I like to spend at least one evening cooking one of my lazy meals where I can just throw ingredients into a pan and the end result is something incredibly tasty that has my family wanting seconds.

I made a quick sauce by crushing a clove of garlic, teaspoon of honey, two tablespoons of dark soy sauce and a chopped red chilli.

I cooked the chicken in a tablespoon of groundnut oil before adding the vegetables, after a minute of cooking I added the noodles and sauce and continued to fry for 2 minutes.

I adore butternut squash in stir fry so if you haven’t already tried it I urge you to.

Day 1

Today my Emma Bridgewater bag contained the ingredients to make the following dish:

Crab and Chilli Spaghetti

Crab and Chilli Spaghetti

This dish was developed using what was left in my fridge as a ‘use up’ exercises  I often find these turn out to be the most exciting dishes and this one did not disappoint.

After having a rummage in the fridge I found some Asparagus, Vine Tomatoes and Cream.  To the ingredients from the fridge I added a clove of garlic, tin of white crab meat, chilli flakes, dried oregano and spaghetti from the store cupboard.

I fried the asparagus, garlic and tomatoes in a little olive oil before adding in the crab meat, I then sprinkled the dried spices and finished with a touch of cream.
