Fresh Week Day 5

Today marks day 5 of fresh week.  This evenings meal was paella!

Ingredients

6 boneless chicken thighs quartered

sea salt

freshly ground black pepper

olive oil

100 g chorizo, sliced (Because I don’t eat pork I purchased a Halal spicy beef sausage)

1 onion, finely chopped

4 cloves garlic, finely chopped

2 litres Hot chicken stock

2 large pinches saffron

1 heaped teaspoon smoked paprika

500 g paella rice

1 small bunch flat-leaf parsley chopped

2 handfuls frozen peas

10 king prawns,

500 g mussels

2 small squid or Calamari rings

Method

Season the chicken pieces with salt & pepper. Heat a little olive oil in a large deep pan and fry the chicken until golden brown on both sides.

Add the sliced chorizo and fry until browned and crispy, add the onion and garlic and cook until soft. Infuse half the hot chicken stock with the saffron. Add the smoked paprika, rice and infused stock and cook on a medium heat, stirring from time to time.

After 20 minutes pour in the rest of the stock along with the peas, prawns, mussels and chopped squid. Place a lid on the pan and cook for a further 10 minutes.

Finally sprinkle with chopped parsley and a wedge of lemon.

Fresh Week Day 4

Today marks day 4 of fresh week.  This evenings meal included Tuna Pasta Bake, focaccia and Carrot Cake!

Ingredients:

250g strong white bread flour

1 tsp salt

1 sachet dried easy blend yeast

1 tbsp olive oil

200ml/ oz cold water

Rosemary or herbs of your choice

Place the flour, salt, yeast, olive oil, herbs and 150ml of the water into a large bowl. Gently stir with a wooden spoon to form a dough then knead the dough in the bowl for five minutes, gradually adding the remaining water.

Stretch the dough by hand in the bowl for about five minutes.

Tip the dough onto an oiled work surface and continue kneading for five more minutes. Return the dough to the bowl, cover and leave to rise until doubled in size.

Grease a baking sheet and place the flattened dough on then leave to prove for one hour.

Preheat the oven to 220C/425F/Gas 7. Drizzle the bread with oil then bake in the oven for 20 minutes. Serve hot or warm.

Fresh Week Day 3

Today marks day 3 of fresh week.  This evenings meal included an experiment using the Tefal Actifry and Chocolate cupcakes!

I love Kale and I love Kale Chips, if you have never tried them before you really should give them a go!  Usually I bake my Kale in the oven until crisp but today I decided to make them in the Tefal Actifry.  I used half the amount of oil I would usually put on the Kale if baked in the oven and although the Kale was not as crispy it still tasted amazing!

Dinner this evening was Roast Chicken (skin removed) boiled rice, Roasted Beetroot, Carrots and Peppers and Baked Kale.

I featured these Chocolate fudge cupcakes last Halloween and because they are so delicious I have decided to write the recipe again.  The cake is light and fluffy and the topping is dark, dense and indulgent.  I usually get around 24 cupcakes or 12 muffin sized cakes from the following recipe.

200g unsalted butter (100g for the topping)

2 large eggs

250ml buttermilk

250g caster sugar

280g plain flour

1 tsp bicarbonate of soda

350g dark chocolate, melted (250g for the topping)

2 tbsp cocoa powder

Icing sugar

Method:

Preheat the oven to 180°c and line your cupcake or muffin trays, I used polka dot cases on this occasion.

Combine  softened butter, eggs, sugar and 100g of the melted chocolate in a large bowl or if you’re lazy like me pop it into the food mixer.

Sift the flour, bicarbonate of soda and cocoa powder into the mixture.

Slowly Pour the buttermilk into the mixture and beat for 1-2 minutes.

I find that using an ice-cream scoop makes life so much easier when spooning the batter into the trays. Bake for 16-18 minutes.

To make the topping:

Put the butter and the chopped chocolate into a bowl over a pan of water and melt slowly until combined and glossy. gradually add icing sugar until the topping becomes firm enough to decorate.

Spoon the topping onto the cupcakes and decorate

Fresh Week Day 2

Today marks day 2 of fresh week and I am handing the blog over to Mini Gourmand as she has been cooking at school today and therefore dinner has been prepared by her hands so it’s only fair.

 

At school today we made bolognese. It was fairly straight forward for me as I’ve made it before and I felt clever that I was making tonight’s tea so I was looking forward to tasting it.

Ingredients 

500g of minced beef/quorn.

1 red pepper.

3 small mushrooms.

1 carrot.

1 white onion.

2 cloves of garlic.

2 tbsp tomato purée.

1 tin of chopped tomatoes.

2 shakes of Italian herbs.

So all we had was some instructions on the board with no demonstration we just had to get on with what we thought was right.

Step one: Chop up the vegetables: finely evenly chop the pepper,mushroom,garlic and onion and add each to the pan.(the onion and garlic first)

Step 2: After the vegetables have had a good sauté, add the minced meat and cook until brown and looks cooked.

Step 3: After the mince and vegetables are fully cooked add your tomato purée and chopped tomatoes. Then after two minutes add your seasoning.

Step 4: Leave the sauce to simmer and cook for a extra 20 minutes on a low heat and then its ready to serve.

Lucie’s Bolognese looked delicious so I thought I would make some garlic and herb potatoes to go with the dish.

Fresh Week Day 1

Today marks day 1 of fresh week, I’ve actually made a couple of things in advance purely to save time as I don’t often get to spend as much time as I would like in the kitchen at the moment due to Baby Gourmands feeding times.

Lunch today was Tuna Pasta (I made a similar dish here) I made enough for a pasta bake for Dinner one evening so this will be frozen until needed.

Dinner this evening was a Red Onion, Olive and Goats cheese tart made using left over puff pastry from the freezer (I made a similar one here)  The salad was quite simple and was a good chance to use up some tomatoes and cucumber that I had in the fridge.

Mini Gourmand is not a fan of goats cheese so had Chicken and Potatoes cooked in the Tefal Actifry with steamed broccoli.

Apple Crumble

 

I made an apple crumble for dessert but had to use 1 processed item which was Alpro Soya dairy free custard as home made custard is too rich for my stomach.

Fresh Week 2013

Tefal are calling on the public to ditch their convenience meals in favour of fresh ingredients at meal times, I have received a Tefal  Fresh Express and an organic vegetable box so I can make some delicious family meals to share with my readers.

The majority of what my family eats is cooked from scratch but I do admit I sometimes find it easier to pop into Marks and Spencer for a cake or a loaf of bread rather than make my own from time to time.

I have received a great selection of fruit and vegetables from Riverford Organics to help me with my pledge and although I don’t like to menu plan I do have some great meals up my sleeve.
