Baked Eggs – Gourmand Style

Before we moved down to Leamington Spa, I often made the journey home to Newcastle on a Saturday morning rather than arriving back in the middle of the night so I liked to have something nice prepared for Mini Gourmands waking at her grandparents and here is where Baked Eggs – Gourmand Style was invented.

I’d never actually made baked eggs before so I apologise if my recipe is incorrect or causes offence to any masters of baked eggs.

2 large eggs
Handful of chopped chorizo
1 spring onion chopped
3 tbsp double cream
1/2 red pepper diced
1 tsp chilli sauce
Handful of mature cheese grated
Preheat the oven to 180C
Place the diced pepper into your ramekin followed by the sliced chorizo and spring onion. pour the double cream and chilli sauce on top of the vegetables. Break your eggs, one at a time, into the dish being careful not to break the yolks.  Cover the eggs with grated cheese.
Place the ramekin into a roasting tin and using a kettle fill the roasting tray with hot but not boiling water until it comes half way up the side of your ramekin.
Bake for 15 minutes until the whites of your eggs are only just set.  Serve with buttered toast and enjoy!
