Caramelised Balsamic and Red Onion Tart with Goats’ Cheese
Serves 6 with Salad, it can also be eaten cold so can be taken on a picnic or eaten for lunch the next day.
3 tablespoons Balsamic vinegar, I used Blueberry Balsamic for a sweeter taste.
2 large red onions sliced
100g goats cheese, I used welsh goats cheese
Splash of olive oil
Pack of Filo pastry
To make the filling
1. Melt the butter and a splash of olive oil in a medium-sized saucepan, stir in the onions and balsamic vinegar and cook very gently without a lid, stirring often, for about 30 minutes until they have reduced down and taken on a glazed appearance and all the excess liquid has evaporated.
2. Score a 1” rectangle in the middle of the filo pastry, when rolled out it should fit a baking tray.
3. Spoon the onion mixture into the filo pastry. Top with crumbled goats’ cheese. Finally sprinkle with a little cayenne and bake for 20 minutes in an oven pre heated to 200 degrees.
