Tuna and Vegetable pasta bake

Serves 4 -6

1 tin of tuna (leave out if vegetarian)
1 tin of chopped tomatos
1 Green pepper
2 cloves of garlic
6 baby sweetcorn
1 pack of asparagus
6 baby mushrooms
4 Handfuls of pasta (I used Penne)
Splash of Olive Oil
Pinch of oregano, thyme & Basil
1 Buffalo mozzarella
Parmigiano-Reggiano cheese

1.       Cook pasta in a large pan of salted boiling water according to instructions on the packet.
2.       Chop vegetables and cook in Olive oil until cooked.
3.       Add tuna and tomatoes to vegetable mix and cook for a further 5 minutes.
4.       Add herbs to vegetable mix stir and remove from heat.
5.       Drain the cooked pasta and return to the pan, add the vegetable mix and stir to combine
6.       Place pasta into a large oven proof dish or individual dishes
7.       Top with chopped mozzarella and grate Parmigiano-Reggiano cheese over the top
8.       Place in a hot oven until the cheese is grated

  2. Thanks for the comment. I do actually cook a great deal of non meat dishes as I like to know where my ingredients come from and If I can't buy local sourced meat I don't bother so keep checking back for some vegetable meals xx
